  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 cup whole milk
  • 2 tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1 tsp cornstarch (optional)
  • Pinch of nutmeg

Instructions

  1. Rinse broccoli under cold water and cut into uniform bite-sized florets.
  2. Bring a large pot of salted water to a boil.
  3. Add broccoli and blanch for about 60 seconds.
  4. Transfer immediately to an ice bath to stop cooking.
  5. Drain and pat broccoli completely dry.
  6. Melt butter in a saucepan over medium heat.
  7. Add flour and whisk continuously for 1 minute to form a roux.
