  • 4 cups fresh broccoli florets
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs or panko

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Lightly blanch the broccoli in boiling water for 2–3 minutes, then drain well.
  3. Melt butter in a saucepan over medium heat and sauté the onion until soft.
  4. Add garlic and cook for about 30 seconds until fragrant.
  5. Stir in flour and cook for 1 minute while stirring constantly.
  6. Gradually whisk in chicken broth and cream until smooth.
  7. Add Dijon mustard, salt, and pepper and simmer until the sauce thickens.
  8. Stir in cheddar cheese and half of the Parmesan until melted and creamy.
  9. Arrange broccoli in a baking dish and top with cooked chicken.
  10. Pour the cheese sauce evenly over the casserole.
  11. Sprinkle breadcrumbs and remaining Parmesan on top.
  12. Bake for 25–30 minutes until the top is golden and the sauce is bubbling.
  13. Let the casserole rest for 5 minutes before serving.

Notes

Use rotisserie chicken for convenience and flavor. Lightly blanching the broccoli keeps it bright and prevents overcooking. Freshly shredded cheese melts more smoothly than pre-packaged shredded cheese.
