  • 1½ tsp fine salt
  • 2 tbsp olive oil
  • 2 large yellow onions
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp poppy seeds (optional)
  • ½ tsp black pepper (optional)

Instructions

  1. Combine warm water, sugar, and yeast and let sit 8–10 minutes until foamy.
  2. Add olive oil and salt, then gradually mix in bread flour.
  3. Knead dough for 8–10 minutes until smooth and elastic.
  4. Place in an oiled bowl, cover, and let rise 60–90 minutes until doubled.
  5. Prepare onions by slicing and mixing with olive oil, salt, and pepper or sauté until soft and golden.
  6. Punch down dough and divide into 10–12 equal pieces.
  7. Shape into tight balls and place on a lined baking sheet.
  8. Cover and let rise again for 30–45 minutes.
  9. Brush tops lightly with water or oil and add onion topping and poppy seeds.
  10. Bake at 400°F (205°C) for 18–22 minutes until golden brown.
  11. Cool on a wire rack before serving.

Notes

Use bread flour for best chewy texture. Proper kneading and proofing are key. Pre-cooking onions gives a sweeter, more balanced flavor, while raw onions create a sharper, more traditional bakery-style finish.
