- 1 cup cottage cheese (full-fat or 2%)
- 1 medium apple, peeled and finely diced
- 1 large egg
- 1/2 cup rolled oats (or 1/4 cup almond flour)
- 1 tsp ground cinnamon
- 1 tbsp honey or maple syrup (optional)
- 1/2 tsp vanilla extract
- 1/4 tsp ground nutmeg (optional)
- Pinch of salt
Instructions
- Preheat oven to 375°F (190°C) and grease a mini muffin tin.
- Peel and finely dice the apple into small 1/4-inch pieces, then pat dry.
- In a bowl, mix cottage cheese, egg, vanilla, cinnamon, nutmeg, honey, and salt.
- Fold in rolled oats (or almond flour), then gently mix in diced apple.
- Let batter sit for 2–3 minutes to thicken.
- Scoop into muffin tin, filling each cup about 3/4 full.
- Bake for 20–25 minutes until set and lightly golden.
- Cool in pan for 10–12 minutes before removing.
- Serve warm or store for later.
Notes
Drain excess liquid from cottage cheese if needed. Dice apples small and allow proper cooling time to prevent bites from falling apart.
