  • 2 large eggs, room temperature
  • ½ cup (115 g) unsalted butter, melted
  • ½ cup (120 ml) whole milk or heavy cream
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch (or all-purpose flour)
  • ½ teaspoon salt
  • Optional: ½ cup shredded cheddar cheese
  • Optional: 2 tablespoons sour cream
  • Optional: 1 tablespoon chopped green onions
  • Optional: ½ teaspoon paprika

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9-inch baking dish with butter or nonstick cooking spray.
  3. In a large mixing bowl combine whole kernel corn and creamed corn.
  4. Add eggs, melted butter, milk or cream, sugar, cornstarch, and salt.
  5. Whisk gently until fully combined without overmixing.
  6. Pour the mixture into the prepared baking dish.
  7. Spread the mixture evenly across the dish.
  8. Place the dish in the oven and bake for 40–45 minutes.
  9. Bake until the top becomes lightly golden and the edges are set.
  10. Ensure the center remains soft but not liquid.
  11. Remove from the oven and let it rest for 5–10 minutes.
  12. Serve warm using a large spoon.

Notes

For the best texture, avoid overmixing the batter and allow the pudding to rest after baking so the custard sets properly. Whole kernel corn adds texture while creamed corn provides the signature creamy base.
