- 2 medium yellow onions, sliced into ½-inch rings
- 1 cup full-fat cottage cheese
- 2 large eggs
- 1 cup panko breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp smoked paprika
- ½ tsp onion powder
- Salt and black pepper to taste
- Olive oil spray
Instructions
- Preheat oven to 425°F or air fryer to 400°F.
- Slice onions into rings and pat them completely dry.
- Add cottage cheese and eggs to a blender and blend until smooth.
- Pour the mixture into a shallow bowl.
- In another bowl, mix panko, Parmesan, garlic powder, smoked paprika, onion powder, salt, and pepper.
- Dip each onion ring into the cottage cheese mixture, letting excess drip off.
- Press into breadcrumb mixture until fully coated.
- Place coated rings on a wire rack over a baking sheet.
- Let rest for 5–10 minutes.
- Lightly spray with olive oil.
- Bake for 22–26 minutes or air fry for 12–15 minutes, flipping halfway.
- Serve immediately while crispy.
Notes
Blend the cottage cheese until completely smooth for best results. Always dry the onions well and avoid overcrowding to ensure maximum crispiness.
