Description

Ingredients

  • 1 lb sirloin, flank, or ribeye steak (thinly sliced against the grain)
  • 1 tablespoon neutral oil
  • Salt and black pepper to taste
  • 8 oz lo mein, linguine, or ramen noodles
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon brown sugar
  • 1/4 cup beef broth
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon sesame oil
  • Sliced green onions (optional)
  • Toasted sesame seeds (optional)

Instructions

  1. Bring a pot of salted water to a boil and cook noodles until slightly underdone. Reserve 1/4 cup pasta water, then drain.
  2. Pat steak dry and season with salt and pepper.
  3. Heat oil in a skillet over high heat and sear steak in batches for 1–2 minutes per side. Remove and set aside.
  4. Lower heat to medium and melt butter in the same pan.
  5. Add garlic and cook for 30–60 seconds until fragrant.
  6. Stir in soy sauce, oyster sauce, brown sugar, and beef broth. Simmer briefly.
  7. Add noodles and toss to coat, adding reserved pasta water as needed.
  8. Return steak to the pan and toss everything together.
  9. Remove from heat and drizzle with sesame oil.
  10. Serve hot, topped with green onions and sesame seeds if desired.

Notes

Use high heat for a proper steak sear and avoid overcrowding the pan. Watch garlic closely to prevent burning. Slice steak against the grain for tenderness and adjust sauce seasoning before serving.
