Garlic butter steak lightning noodles are a bold, fast, and deeply satisfying one-pan dish combining seared steak, glossy garlic butter sauce, and tender noodles — ready in about 25 minutes.

- 1 lb sirloin, flank, or ribeye steak (thinly sliced against the grain)
- 1 tablespoon neutral oil
- Salt and black pepper to taste
- 8 oz lo mein, linguine, or ramen noodles
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon brown sugar
- 1/4 cup beef broth
- 1/2 teaspoon red pepper flakes (optional)
- 1 teaspoon sesame oil
- Sliced green onions (optional)
- Toasted sesame seeds (optional)
Instructions
- Bring a pot of salted water to a boil and cook noodles until slightly underdone. Reserve 1/4 cup pasta water, then drain.
- Pat steak dry and season with salt and pepper.
- Heat oil in a skillet over high heat and sear steak in batches for 1–2 minutes per side. Remove and set aside.
- Lower heat to medium and melt butter in the same pan.
- Add garlic and cook for 30–60 seconds until fragrant.
- Stir in soy sauce, oyster sauce, brown sugar, and beef broth. Simmer briefly.
- Add noodles and toss to coat, adding reserved pasta water as needed.
- Return steak to the pan and toss everything together.
- Remove from heat and drizzle with sesame oil.
- Serve hot, topped with green onions and sesame seeds if desired.
Notes
Use high heat for a proper steak sear and avoid overcrowding the pan. Watch garlic closely to prevent burning. Slice steak against the grain for tenderness and adjust sauce seasoning before serving.
