- 1 whole turkey (12–15 lbs), fully thawed
- 20–25 garlic cloves, crushed to paste
- 1/2 cup homemade sofrito
- 3 tablespoons adobo seasoning
- 2 tablespoons dried oregano
- 1/2 cup extra virgin olive oil
- 1/4 cup white vinegar or fresh orange juice
- 2 tablespoons kosher salt
- 1 tablespoon black pepper
- Fresh thyme or bay leaves (optional)
Instructions
- Remove giblets and pat the turkey completely dry with paper towels.
- In a large bowl, combine crushed garlic, sofrito, adobo, oregano, olive oil, vinegar or orange juice, salt, and black pepper to form a thick paste.
- Gently loosen the skin over the breast and thighs without tearing.
- Rub a generous portion of the marinade directly under the skin onto the meat.
- Coat the entire exterior of the turkey with the remaining paste.
- Stuff the cavity with extra marinade and optional fresh herbs.
- Cover tightly and refrigerate for 24-48 hours to marinate.
- Remove turkey from refrigerator 1 hour before roasting.
- Preheat oven to 325°F and place turkey on a roasting rack in a pan.
- Roast until internal breast temperature reaches 165°F, about 3-4 hours.
- Rest 20-30 minutes before carving and serving.
Notes
For best results, marinate at least 24 hours. Lift the skin carefully for full flavor penetration and always use a meat thermometer to avoid overcooking.
