  • 1 tbsp butter
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 inch baking dish.
  2. Cook the thin spaghetti in salted boiling water until al dente.
  3. Drain the pasta and set it aside.
  4. Melt butter in a skillet over medium heat.
  5. Add diced onion, bell pepper, and garlic.
  6. Sauté until softened and fragrant.
  7. In a large bowl combine cream of mushroom soup, Rotel tomatoes, cubed Velveeta, and chicken broth.
  8. Add the sautéed vegetables and shredded chicken.
  9. Stir until well combined.
  10. Add the cooked spaghetti and toss until coated with sauce.
  11. Season with salt and black pepper.
  12. Transfer mixture to the prepared baking dish.
  13. Top with shredded cheddar cheese.
  14. Cover with foil and bake for 25 minutes.
  15. Remove foil and bake 5 to 10 minutes until cheese is bubbly and lightly golden.
  16. Let the casserole rest for 5 minutes before serving.

Notes
