Description

A rich, creamy Southern-style baked mac and cheese made with layers of sharp cheddar, colby jack, and a silky cream and egg mixture that creates the perfect cheesy comfort dish.


Ingredients

  • 1 lb elbow macaroni
  • 2 cups sharp cheddar cheese, freshly shredded
  • 2 cups colby jack cheese, freshly shredded
  • 8 oz Velveeta or processed cheese, cubed
  • 3 tablespoons butter
  • 2 cups heavy cream or whole milk
  • 2 large eggs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon mustard powder (optional)

Instructions

  1. Preheat the oven to 350°F.
  2. Bring a large pot of salted water to a boil and cook elbow macaroni until slightly under al dente.
  3. Drain the pasta and return it to the pot, then add butter and toss until coated.
  4. In a large bowl whisk together eggs, heavy cream or milk, salt, black pepper, garlic powder, smoked paprika, and mustard powder.
  5. Add the pasta to the bowl and mix until well coated.
  6. Combine shredded cheddar and colby jack cheese in a separate bowl.
  7. Grease a 9×13 baking dish and pour half of the pasta mixture into the dish.
  8. Sprinkle half of the shredded cheese mixture over the pasta.
  9. Add the remaining pasta mixture on top.
  10. Cover with the remaining shredded cheese and tuck cubed Velveeta throughout the top layer.
  11. Cover the dish with foil and bake for 30 minutes.
  12. Remove foil and bake an additional 15–20 minutes until the top is golden and bubbly.
  13. Let the mac and cheese rest for 5 minutes before serving.

Notes

Use freshly shredded cheese for the smoothest melt and avoid overcooking the pasta so it holds the creamy sauce after baking.
