This copycat Starbucks jalapeno chicken pocket delivers a flaky puff pastry filled with seasoned chicken, jalapeños, and melted pepper jack cheese. It’s crispy, savory, slightly spicy, and perfect for meal prep or a quick high-protein snack.


Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 egg
  • Pinch of coarse salt or everything bagel seasoning (optional)
  • 1 cup cooked chicken breast, shredded
  • 1/2 cup pickled jalapeños, chopped
  • 3/4 cup pepper jack cheese, shredded
  • 2 oz cream cheese, softened
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cumin
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a bowl, mix chicken, cream cheese, pepper jack, garlic powder, smoked paprika, onion powder, cumin, salt, and pepper.
  3. Fold in chopped jalapeños and mix well.
  4. Roll out puff pastry on a floured surface and cut into 4–6 rectangles.
  5. Spoon filling onto half of each rectangle, leaving a border.
  6. Fold pastry over filling and seal edges with fingers, then crimp with a fork.
  7. Poke small holes on top for ventilation.
  8. Beat egg with a little water and brush over each pocket.
  9. Sprinkle optional seasoning on top.
  10. Bake for 18–22 minutes until golden brown.
  11. Let cool for 5 minutes before serving.

Notes

Use cold filling for easier assembly and better pastry texture. Do not overfill to avoid leaking. Pickled jalapeños give the closest flavor to Starbucks version, but fresh can be added for extra heat.
