- 12 oz cavatappi or penne pasta
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk, warmed
- 1/2 cup heavy cream
- 1 cup fontina cheese, freshly shredded
- 3/4 cup sharp white cheddar cheese, freshly shredded
- 1/2 cup gruyère cheese, freshly shredded
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder

Instructions
- Bring a large pot of salted water to a boil and cook the cavatappi or penne pasta until al dente.
- Drain the pasta and set aside.
- In a large saucepan over medium heat, melt the butter.
- Whisk in the flour and cook for about 2 minutes until lightly golden.
- Slowly whisk in the warm milk followed by the heavy cream, stirring constantly.
- Cook the sauce for 5–7 minutes until it thickens and coats the back of a spoon.
- Remove the pan from the heat and add the shredded cheeses in batches, stirring until melted and smooth.
- Season the sauce with garlic powder, onion powder, smoked paprika, salt, and white pepper.
- Add the cooked pasta to the cheese sauce and gently stir until fully coated.
- Serve immediately topped with fresh parsley and an optional drizzle of truffle oil.
Notes
For the smoothest cheese sauce, always grate your own cheese and add it off the heat in small batches. A drizzle of truffle oil before serving gives the dish the signature Yard House style flavor.
