  • 12 oz fettuccine pasta
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 1 teaspoon lemon zest
  • 1/4 teaspoon freshly grated nutmeg
  • Salt and black pepper, to taste
  • Fresh parsley, for serving

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the fettuccine and cook until al dente according to package directions.
  3. Reserve 1 cup of pasta water before draining the pasta.
  4. While the pasta cooks, melt 2 tablespoons butter in a large skillet over medium-high heat.
  5. Add the shredded cabbage and a generous pinch of salt.
  6. Cook the cabbage for 8 to 10 minutes, stirring occasionally, until tender and lightly caramelized.
  7. Push the cabbage to one side of the skillet and add the remaining butter.
  8. Add the minced garlic and cook for 30 seconds until fragrant.
  9. Pour in the heavy cream and bring to a gentle simmer.
  10. Let the sauce cook for 2 to 3 minutes until slightly thickened.
  11. Lower the heat and stir in the cream cheese until smooth.
  12. Add the Parmesan cheese gradually, stirring constantly.
  13. Mix in the lemon zest, nutmeg, and black pepper.
  14. Add the cooked pasta and toss everything together.
  15. Use reserved pasta water as needed to loosen the sauce until silky.
  16. Serve immediately with fresh parsley and extra Parmesan.

Shred the cabbage thin for the best texture. Freshly grated Parmesan melts smoother than pre-shredded cheese. Reserve pasta water to create the glossiest sauce possible. Keep the heat low once the cheese is added to avoid a grainy sauce.
