Description
A fresh, colorful, and crowd-pleasing cowboy caviar made with black-eyed peas, black beans, corn, tomatoes, peppers, avocado, and a bright tangy lime dressing. Perfect as a dip, salad, or topping for grilled meats.

- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) whole kernel corn, drained
- 1 cup cherry tomatoes, quartered
- 1 red bell pepper, finely diced
- 1 green bell pepper, finely diced
- 1/2 red onion, finely diced
- 1 jalapeño, seeded and minced
- 1 large avocado, diced
- 1/4 cup fresh cilantro, roughly chopped
- 3 tablespoons olive oil
- 3 tablespoons fresh lime juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of cayenne pepper (optional)
Instructions
- Whisk together olive oil, lime juice, apple cider vinegar, honey, cumin, garlic powder, salt, pepper, and cayenne in a small bowl until fully combined.
- In a large mixing bowl, add the black-eyed peas, black beans, corn, cherry tomatoes, red bell pepper, green bell pepper, red onion, and jalapeño.
- Toss gently to distribute everything evenly.
- Pour the dressing over the bean mixture and toss well to coat.
- Refrigerate for 30 minutes to 24 hours for deeper flavor if desired.
- Just before serving, fold in the diced avocado and chopped cilantro gently.
- Taste and adjust salt if needed.
- Serve chilled with tortilla chips or as a side salad.
Notes
For best results, add the avocado just before serving to keep it fresh and vibrant. The base mixture tastes even better after chilling for 30–60 minutes.
