Golden, crispy beef tallow french fries with a steakhouse-style crunch, fluffy centers, and rich savory flavor from the classic double-fry method.

- 3 pounds russet potatoes (about 4 large)
- 4 cups beef tallow (rendered, solid)
- 1 tablespoon kosher salt, divided
- 1 teaspoon garlic powder (optional)
- Flaky sea salt for finishing
Instructions
- Peel the russet potatoes and cut them into ¼-inch thick strips.
- Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes.
- Drain and pat the potatoes completely dry with a kitchen towel.
- Melt the beef tallow in a large heavy pot or Dutch oven over medium heat.
- Heat the tallow to 325°F using a deep-fry thermometer.
- Working in batches, fry the potatoes for 4 to 5 minutes until pale gold and cooked through.
- Remove the fries with a slotted spoon and drain on a wire rack.
- Let the fries rest for at least 10 minutes.
- Increase the tallow temperature to 375°F.
- Return the fries to the hot tallow in batches and fry for 2 to 3 minutes until deep golden brown and crispy.
- Drain on a wire rack and season immediately with kosher salt.
- Finish with flaky sea salt and serve hot.
Notes
Use russet potatoes only for the fluffiest interior and crispiest crust. Always dry the potatoes thoroughly before frying to avoid splattering and soggy fries.
