  • 1 lb ground turkey (93% lean)
  • 3 cloves garlic, finely grated
  • 1 tbsp fresh ginger, finely grated
  • 3 scallions, thinly sliced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp white pepper
  • 1 large egg white
  • 1 tsp kosher salt
  • 32 round dumpling wrappers
  • 3 tbsp neutral oil
  • 1/3 cup water
  • 3 tbsp low-sodium soy sauce (for dipping sauce)
  • 2 tbsp rice vinegar (for dipping sauce)
  • 1 tsp toasted sesame oil (for dipping sauce)
  • 1 tsp chili crisp
  • 1 tsp finely sliced scallion greens

Instructions

  1. Finely chop the cabbage and toss with kosher salt in a colander. Let sit for 15 minutes.
  2. Transfer cabbage to a clean kitchen towel and squeeze out all excess moisture.
  3. In a large bowl, combine cabbage, ground turkey, garlic, ginger, scallions, soy sauce, sesame oil, rice vinegar, sugar, white pepper, and egg white.
  4. Mix in one direction for 60 seconds until combined. Chill filling for 10 minutes.
  5. Set up a wrapping station with wrappers, filling, water bowl, and parchment-lined baking sheet.
  6. Place 1 heaping teaspoon of filling in the center of each wrapper.
  7. Wet the edges with water, fold in half, and pleat the front edge to seal.
  8. Place finished dumplings on the parchment-lined tray.
  9. Heat 1 1/2 tablespoons oil in a large non-stick skillet over medium-high heat.
  10. Arrange dumplings flat-side down in a single layer and fry 2-3 minutes until bottoms are golden brown.
  11. Pour 1/3 cup water into the skillet and immediately cover with a lid.
  12. Reduce heat to medium and steam for 5 minutes.
  13. Remove lid and cook 1-2 minutes until water evaporates and bottoms become crispy.
  14. Repeat cooking process with remaining dumplings and oil.
  15. Whisk together soy sauce, rice vinegar, sesame oil, chili crisp, and scallion greens for dipping sauce.
  16. Serve dumplings warm with dipping sauce on the side.

Notes

Do not skip salting and squeezing the cabbage, as it prevents soggy dumplings. Freeze uncooked dumplings on a tray before storing for easy make-ahead meals. Reheat leftovers in a skillet instead of the microwave to keep the crispy texture.
