Light, fluffy gelatin free marshmallows made with aquafaba, perfect for vegan, halal, and plant-based diets.
Ingredients

- 3/4 cup aquafaba (from 1 can of chickpeas)
- 1 teaspoon cream of tartar
- 1 1/2 cups granulated sugar
- 1/2 cup water
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
- 1/4 cup cornstarch
Instructions
- Line an 8×8 pan with parchment and dust with powdered sugar and cornstarch.
- Whip aquafaba and cream of tartar until stiff peaks form (8–12 minutes).
- Heat sugar and water to 240°F without stirring.
- Slowly pour hot syrup into the mixer while running.
- Add vanilla extract and whip until thick and glossy.
- Spread mixture into the prepared pan and smooth the top.
- Dust with more powdered sugar and cornstarch.
- Let set for 4–6 hours or overnight.
- Cut into squares and serve.
Notes
Do not refrigerate. Store in an airtight container at room temperature for up to 5 days. Ensure syrup reaches 240°F for proper setting.
