Description

Ingredients

  • 3/4 cup aquafaba (from 1 can of chickpeas)
  • 1 teaspoon cream of tartar
  • 1 1/2 cups granulated sugar
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • 1/4 cup cornstarch

Instructions

  1. Line an 8×8 pan with parchment and dust with powdered sugar and cornstarch.
  2. Whip aquafaba and cream of tartar until stiff peaks form (8–12 minutes).
  3. Heat sugar and water to 240°F without stirring.
  4. Slowly pour hot syrup into the mixer while running.
  5. Add vanilla extract and whip until thick and glossy.
  6. Spread mixture into the prepared pan and smooth the top.
  7. Dust with more powdered sugar and cornstarch.
  8. Let set for 4–6 hours or overnight.
  9. Cut into squares and serve.

Notes

Do not refrigerate. Store in an airtight container at room temperature for up to 5 days. Ensure syrup reaches 240°F for proper setting.
