- 2 large purple sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon fresh lime juice
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons chopped fresh cilantro (optional, for serving)
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Toss the cubed purple sweet potato with olive oil, salt, and pepper until evenly coated.
- Spread the cubes in a single layer, making sure they aren’t touching, for the best caramelization.
- Roast for 35 to 40 minutes, flipping halfway through, until fork-tender and lightly caramelized at the edges.
- Whisk together the honey and lime juice in a small bowl while the sweet potato finishes roasting.
- Remove from the oven and drizzle immediately with the honey-lime mixture while still hot.
- Top with fresh cilantro if using, and serve warm.
Notes
Cutting the cubes evenly is the single biggest factor in how well this turns out — uneven pieces mean some will burn while others stay underdone. For a naturally sweeter result without added honey, cut the pieces slightly smaller so more surface area caramelizes.
