- ½ cup apple cider vinegar
- ½ cup warm water
- 1 tablespoon granulated sugar
- 1 teaspoon kosher salt

- Optional: 1 bay leaf
Instructions
- Slice the red onion as thin as possible.
- For milder onions, soak slices in cold water for 10 minutes, then drain.
- In a small bowl, whisk together apple cider vinegar, warm water, sugar, and salt until dissolved.
- Pack onion slices into a clean 16 oz glass jar.
- Add optional garlic, red pepper flakes, or bay leaf if desired.
- Pour the brine over the onions, pressing slices down to fully submerge.
- Let sit at room temperature for 30 minutes.
- Refrigerate for deeper flavor before serving.
- Store in the fridge for up to 2 weeks using a clean utensil each time.
